Chives are an easy-to-grow perennial herb. It belongs to the Allium genus, which also includes garlic, onions, and leeks. Although it is often considered a fine herb, chives are indeed a vegetable with a mild onion taste. People have cultivated allium vegetables for centuries for their characteristic pungent flavors in cooking and their medicinal properties. The flowers are also edible and can be used as a garnish in salads. Chives are best used fresh, but chopped leaves can be frozen.
